This coffee comes from smallholders located in the town of Chimhucum high in the Los Altos mountains of Chiapas. Chimhucum – which means "Two rivers" in the Tzotzil language - as a micro-climate is characterized by a wet and cold climate for much of the year.
Growers here in Chimhucum take great care to respect the land. Coffee is shade-grown and sustainable practices such as composting and water treatment are employed. The farmers here pay equal attention to processing.
In this Strictly High Grown (SHG) lot Sarchimor, Caturra, and Catuai varietals were hand-depulped and semi-washed. During this process the producers fermented the coffees for between 6 – 12 hours resulting in exceptional fruit sweetness and medium-bright acidity. During dry milling, the lot was meticulously sorted to European Preparation (EP) specifications with a minimum screen size of 15 and above and a maximum of eight defects within 300 grams.
